I have recently been converted to the nut butter life and after years of being adamant that I didn’t like peanut butter; being introduced to Pip & Nut is something I felt I had to share with you!
I am forever seeing people raving about peanut butter; eaten from the spoon, in porridge, on crumpets (another thing I’ve recently discovered I like very much!) but I have always been convinced that I hate the taste and the texture…how wrong was I!
I was very kindly introduced to the world of Pip & Nut butters, they have the most incredible range of nut butters and I have been fully converted; you will now most likely find me in the kitchen with a spoon and a jar of the Coconut Almond butter– which is quite literally the yummiest thing I’ve ever tasted. I am a huge lover of coconut so this was perfect for me!
Ever since embarking on a much more healthy eating adventure I really don’t like eating things with too many ingredients in, I like to consume raw, natural things, lots of fruits & veggies and a predominantly plant based diet! These little jars therefore make me very happy as the ingredient list is incredible small; Almonds, coconut, Sea Salt and Agave syrup. Perfect.
I was also lucky enough to give the almond milks a try; and as someone who is hoping to become vegan one day this was a great way to try some dairy alternatives! And I have to say I am a converted lady! Almond milk is gorgeous; it’s so creamy and delicious and tastes so so good on my weetabix in the morning and I feel so happy knowing that I’m contributing to the vegan lifestyle and not contributing to the dairy industry! I think my favourite has to be the Almond milk with Coconut as I do have a bit of a love for coconut in EVERYTHING! It’s just so so yummy, and such a perfect alternative for dairy milk!
Because I’ve been loving the nut butters so much I thought I would try out making a little healthy treat with them so I’ve come up with these oaty, nutty date balls which are delicious if I do say so myself!
- ½ cup of oats
- 10-12 dried pitted dates
- ½ cup of raisins
- 1-2 tablespoons of Pip & Nut Almond Butter
- 3 Brazil nuts or Cashews
- Teaspoon of Linseed
- Teaspoon of Chia Seeds
- Add ALL the ingredients to a blender, blend them up until they form themselves into a sticky lump
- Roll into balls and place into the fridge until they go hard
- Yes it really is that simple!
